For six people
1 chicken, medium sized and jointed 4 oz bacon, or pancetta, all in one peice 1 cup each of sorrel, celery leaves or lovage Cos lettuce leaves, asparagus tips and stalks Salt, pepper and garlic to taste Butter to taste For the Meatballs 8 oz pork, slightly fatty and finely minced 1/2 cup parsley, chopped 1 tsp lemon zest 1/2 cup white breadcrumbs, fresh 1 egg Garlic, nutmeg, mace, salt, pepper to taste Mix the meatball ingredients together and form into little, walnut-sized balls. Roll in flour and set aside. Simmer the chicken pieces with the bacon in a little water until almost done, add the meatballs and simmer for 15 minutes more. Take care that the sauce is not too runny. Remove bacon and cut into small pieces. Stir in the greens. Cook covered until the greens are just done. Add butter to taste. Weekend Warrior Version Serves four 4 skinless chicken fillets 4 oz lean smoked bacon, chopped fine 1 pint chicken stock 4 oz each of celery leaves, watercress, Chinese Leaf Cos lettuce leaves, asparagus tips and stalks 1/2 tsp salt, pepper 4 oz butter or small tub of lowfat yogurt For the Meatballs - yields 32 1 lb lean pork 1 oz parsley Zest from 1 lemon 4 oz white breadcrumbs, fresh 2 eggs 1 tsp ground nutmeg 1/2 tsp salt 1/2 tsp pepper Freeze half of meatballs for use with pasta. Mix breadcrumbs in food processor and set aside. Mix parsley leaves until finely chopped, then add lemon zest, salt, pepper, nutmeg and meat and process until well blended. Combine with eggs and breadcrumbs. Make walnut-sized meatballs, roll in flour and set aside. In a large pan so not to overlap, simmer chicken breasts with bacon and stock until nearly done. Add the meatballs and simmer for 15 minute more. Stir in greens. Cook covered for about 5 minutes. Add butter, or if using yogurt take care not to boil.
