Recipe: Stewed Beef
Kenelme Digbie, 1669
Serves 16
6 lb. stew beef
3/4 cup flour
1/4 lb. butter
qt. red wine
qt. of beef stock
2 onions, sliced
1 1/2 tsp. allspice
3/4 tsp. ground nutmeg
bread slices
Brown meat.
Add wine and stock to cover.
Add onion and salt.
Boil, then simmer covered 2 hours.
1/4 hour before serving add spices.
